Camping in the Big Horns Menu Plan

 

 

 

 

 

 

 

Camping brings its own set of plans. I had to consider limited cold storage space and frankly, I didn’t want to be standing over a campfire all week. This is the result:

Monday

Lunch: Cold cut sandwiches, chips, veggies, cookies
Dinner: Bratwurst, pretzels, veggies, s’mores

Tuesday

Breakfast: Pancakes, bacon, fresh fruit
Lunch: Sandwiches, chips, veggies
Dinner: Hamburgers, fries, veggies, banana boats

Wednesday

Breakfast: Scrambled eggs, bacon, toast, fresh fruit
Lunch: Sandwiches, chips, veggies
Dinner: Chicken skillet dinner, veggies, biscuits, apple crisp

Thursday

Breakfast: Instant Oatmeal, fresh fruit
Lunch: Sandwiches, chips, veggies
Dinner: Tacos In a Bag, peach cobbler

Friday

Breakfast: Breakfast burritos, fresh fruit
Lunch: Sandwiches, chips, veggies
Dinner: Beef stew, biscuits, s’mores

Saturday

Breakfast: Instant oatmeal, fresh fruit

Snacks for the week: Jiffy Pop popcorn, cookies, granola bars, trail mix

To save time I cooked the chicken and shredded it, cooked the taco meat, and assembled the breakfast burritos. All of these I froze in zip top bags. Then I also made the trail mix and cookies. I made a mix for pancakes and biscuits so all I had to do was add wet ingredients. Also, I bought pre-cooked bacon. Shelf-stable milk to can save on cold storage space. FYI, you can crack eggs into a container and eliminate the fear of crushing the carton – plus they will store easier. Also, the individual powdered drink packets can add variety to beverages without taking up tons of storage space.
